Spiced Lamb Pitas with Feta Mint Sauce

Ingredients
- 1 pound ground lamb
- 1 tablespoon olive oil
- 1/4 cup white onion (finely diced)
- 4 cloves garlic (finely minced)
- 1 teaspoon smoked paprika
- 1 teaspoon allspice
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon ground ginger
- 3/4 teaspoon kosher salt
- to taste pepper
- 1/4 cup fresh mint (chopped plus more for garnish)
- 1/4 cup flat leaf parsley (chopped plus more for garnish)
- 1/2 cup plain greek yogurt
- 1/2 cup fresh mint
- 2 ounces feta cheese
- 1 tablespoon lemon juice
- 4 Pitas
- 1/2 cucumber diced
- 1/2 tomato diced
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the finely diced white onion and minced garlic, and sauté until softened and fragrant.
- Add the ground lamb to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in smoked paprika, allspice, red pepper flakes, ground ginger, kosher salt, and pepper to taste. Cook for a few minutes to blend flavors.
- Remove skillet from heat and stir in chopped fresh mint and flat leaf parsley (reserve some for garnish).
- In a bowl, combine plain greek yogurt, fresh mint, feta cheese, and lemon juice. Mix well to create the feta mint sauce.
- Warm the pita breads briefly in a dry skillet or oven.
- Assemble the pitas by scooping the spiced lamb mixture into each pita pocket.
- Top with diced cucumber and tomato.
- Drizzle with the feta mint sauce and garnish with additional fresh mint and parsley.
- Serve immediately.
