One-Pot Creamy Italian Lasagna Soup

Sausage, spinach, cream, melty cheese, and broken noodles come together in this easy one-pot soup with all the lasagna flavors but no layering.

Ingredients

  • 1 pound spicy Italian chicken sausage
  • 1/2 pound ground beef or chicken
  • 1 yellow onion, chopped
  • 3 tablespoons Italian Seasoning
  • sea salt and pepper
  • 28 ounce can crushed tomatoes
  • 1-2 cups marinara sauce
  • 4 cups broth
  • 4 cups chopped baby spinach
  • 1 pound mafaldine pasta, or 8 lasagna noodles
  • 1 cup heavy cream
  • 1 cup grated mozzarella or provolone
  • 1/2 cup grated parmesan
  • chopped basil or parsley, for serving

Instructions

  1. In a large Dutch oven, cook the sausage, beef, onions, and Italian seasonings until the meat is browned all over, 5-10 minutes.
  2. Add the crushed tomatoes, marinara sauce, and broth. Season with salt and pepper. Cook 10 minutes until thickened slightly. Stir in 2 cups of water, and bring to a boil.
  3. Add the spinach and pasta, cooking until soft, 10-ish minutes. Str in the cream, and both cheeses.
  4. Ladle the soup into bowls and serve topped with parmesan and fresh herbs. Enjoy!
